Step 1
1. Make Curry Paste, in a blender/food processor combine onion, shallot, garlic, ginger, garam marsala, tumeric, salt, red pepper flakes, and lemon zest. Pulse until smooth paste forms. about 1 min.
Step 2
2. Make the chicken. Combine 2 tablespoons of curry paste, the chicken, and the yogurt. Marinate for 20 min or overnight
Step 3
3. Heat large skillet. Add 1/4 cup of curry paste and cook until fragrant, about 1 min. Stir in chicken, coconut milk, and tomato paste, cover and cook until chicken is done about 15 to 20 min. remove lid and simmer for about 5 min.
Step 4
4. Stir in cilantro and serve over rice
