Easy Thai Curry Chicken Meatballs

This is a combination of a few recipes I've tried - these were a big hit at my last birthday party! Yields about 12 large, 2" meatballs. You could make 24 small, 1" meatballs if you wanted to.

Instructions

Step 1
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper for easy cleanup.
Step 2
In a large bowl combine all ingredients. Use your hands or a rubber spatula to gently mix until just combined. Do NOT overmix.
Step 3
Form 2" meatballs. If the mixture is too wet, add panko to the mix 1 tablespoon at a time, until it is easier to shape.
Step 4
Bake for 20-25 minutes, or until an instant read thermometer inserted into a meatball reads 165 degrees F.
