Step 1
Add the sweetener and milk to the beaten egg in a shallow bowl and the soak each bread triangle in the mixture.
Step 2
Spray a non-stick frying pan with some cooking spray and place it over a high heat. Put the bread triangles in the pan ad turn the head down to medium. Cook for 2-3 minutes until golden brown, then turn them over carefully. Cook for another 2-3. When they are golden underneath, remove them from the pan and arrange on a plate.
Step 3
Top with the blueberries, drizzle with the maple syrup and serve.
