Instructions
Step 1
Fry onion and tomatoes in some oil until they soften
Step 2
Mix eggs with milk, green chillies, coriander and the spices and add to the pan with onions and tomatoes
Step 3
Fold the egg a few times until the base is cooked through and the top isn’t runny either. This along with the milk in mixture will ensure eggs are fluffy from inside. Use a plate and flip the omlette to cook the top side to ensure it is crispy from from both sides
Step 4
Serve with toasted bread or paratha
