Ingredients

1 cupcouscous
dry Moroccan
1 cupwater
warm
Salt
black pepper
freshly ground
¼ cupolive oil
divided, regular or extra virgin
2 Tbspfresh lemon juice
1 tspgarlic
minced
1 ½ cupsgrape tomatoes
halved
1 ½ cupsEnglish cucumber
diced
⅓ cupred onion
diced
⅓ cupfeta cheese
finely crumbled
⅓ cupslivered almonds
toasted, optional but highly recommended
⅓ cupfresh parsley
finely chopped
2 Tbspfresh mint
finely chopped
Instructions
Couscous
Step 1
Bring water to a boil in a medium saucepan.
Step 2
Right when it reaches a boil remove from heat and right away stir in couscous and salt and cover. Let rest 5 minutes.
Step 3
Let rest 5 minutes.
Step 4
Drizzle in 1 tsp olive oil, fluff with a fork and let cool about 10 minutes in a salad bowl (toss occasionally if possible to reduce sticking).
Salad
Step 5
In a small mixing bowl whisk together remaining 1/4 cup olive oil, lemon juice and garlic.
Step 6
To bowl with couscous add tomatoes, cucumber, red onion, feta, almonds if using, parsley, and mint.
Step 7
Pour dressing over everything and toss to evenly coat.
Step 8
Season with salt and pepper to taste.
