Ingredients
4 servings

1 tablespoonvegetable oil

½ cupcelery
minced

0.5onion
minced

½ cupcarrot
minced

1clove garlic
minced

bouquet garni
gathered together in a piece of cheesecloth and tied with string

5 cupsvegetable stock

2 cupsgreen beans
cut

1 ½ cupschickpeas
cooked

2tomatoes
medium, peeled, seeded and chopped

parsley
minced, for garnish
Instructions
Step 1
Heat oil in a 4-quart saucepan over medium-low heat.
Step 2
Add celery, onion, carrot, and garlic and cook until vegetables are soft, about 5 minutes.
Step 3
Add bouquet garni, stock, green beans, chickpeas and tomatoes.
Step 4
Bring to a boil.
Step 5
Reduce heat, cover and simmer until green beans are tender, about 15-20 minutes.
Step 6
Remove bouquet garni and serve, garnished with parsley.
