Instructions

Step 1
Purge the crawfish (preferred method): Crawfish will die if left submerged in water for too long. You can store them for a day in a container with water and ice and allow them to excrete poop and grit. They can be left in the water with cornmeal to feed on as long as they can crawl up into the air when needed. When ready to cook, rinse and stir with fresh water three times (for 2 min each time). Discard any dead crawfish. (alternate method): put live crawfish into a washtub or cooler. Pour in fresh water until the crawfish are just submerged. Liberally pour in 12 oz table salt and stir for 2 min, causing them to vomit grit and grime. Rinse and stir with fresh water three times (for 2 min each time). Discard any dead crawfish.
Step 2
Boil crawfish boil bag, lemon, potatoes, corn, and sausage for 15 min(or until potatoes are soft ). Add live crawfish and boil another 3 min until bright red. Remove them from boiling water quickly (they will continue to cook after you take them out).
Step 3
Melt the butter in a saucepan and saute the garlic until brown. Add Cajun seasoning, old bay seasoning, lemon pepper, garlic powder, paprika, sugar, cayenne pepper, MSG, lemon juice, Crystal hot sauce, and water. Stir well.
Step 4
Place boiled crawfish, potatoes, corn, sausage, and sauce into a plastic bag and mix to coat everything.
Step 5
Dipping salt (Optional): mix salt, pepper, and lime juice to taste in individual bowls for dipping.
