Cauliflower & Walnut "Meat" Tacos with mango salsa (vegan, gluten free)

Vegan taco meat made with whole food ingredients, a whole head of cauliflower and walnuts as the base, adding spices and some sweetness from maple syrup, coconut aminos for umami flavor and avocado oil for healthy fat to help with roasting. Pair with my mango de Gallo salsa and pickled red onions! A delicious healthy recipe for lunch or dinner!

Ingredients
6 servings
1 headcauliflower
medium, riced
½ cupwalnuts
2 tspchili powder
2 tspsmoked paprika
1 tsppaprika
1 tspgarlic powder
2 tspcumin
1 tspmaple syrup
1 Tbspcoconut aminos
½ tspsea salt
2 Tbspavocado oil
2 tspgluten free flour

Mango de gallo salsa

Instructions
Step 1
Preheat oven to 375F.
Step 2
Add chopped cauliflower to a food processor and pulse until it turns into small bits (be careful not to overblend- it’s ok if there’s still a few bigger pieces you can chop if needed)
Step 3
Remove from the food processor and and add in walnuts and pulse for a several seconds until resembles ground meat.
Step 4
Combined cauliflower & walnuts to a large bowl and add in all the spices, sea salt, coconut aminos, maple syrup, avocado oil and gf flour. Mix until well combined.
Step 5
Place onto a large baking sheet and spread over evenly (if the pan is too overcrowded you can do on two pans or cook in two batches)
Step 6
Place in the over for 15 minutes, remove and toss and put the oven temp up to 400F and cook for an additional 25 minutes or until it resembles ground meat.
Step 7
Serve with tortillas (I used gluten free) mango de Gallo salsa and pickled red onion or taco toppings of choice!
