Tomato and Fish Soup
Making use of fish - common produce on a small Pacific island! - and poaching it in coconut water.

Step 1
Poach walu with lemongrass, ginger and 40ml coconut juice until just cooked
Step 2
Remove fish and set aside
Step 3
Add kumala to broth and boil for 8 minutes or till soft
Step 4
Remove ginger and lemongrass
Step 5
Mash sweet potato in broth
Step 6
Then add grated green banana to thicken and boil for 1 minute, add enough water to make “soupy”
Step 7
Blanch pele leaves for 30 seconds in hot water and then chop.
Step 8
Place some of the warmed tomato mix into a bowl and top with the warm sweet potato soup base
Step 9
Top with chopped spinach, fish and fresh mango.
