Ingredients: 1kg of Chicken Wings; 500ml of buttermilk; 2 TBSP of cayenne pepper (depending on spice tolerance); 300g of plain flour; 1.5 tbsp of dried thyme; 1.5 tbsp of dried basil; 2 TBSP salt; 1.5 tbsp of oregano; 4 tbsp of paprika; 1 tbsp of celery salt; 3 tbsp of garlic powder; 2 TBSP of black pepper; 1 tbsp of mustard powder; 3 tbsp of white pepper; 1 tbsp of ground ginger; 1 Litre of rapeseed oil (or equivalent); 3 tbsp of soy sauce; 3 tbsp of ketchup; 2 TBSP of sriracha; 3 tbsp of brown sugar; 100ml of Irn Bru

Irn Bru is great, KFC wings are great. Creating a Irn Bru glaze for the wings is amazing. This creates an absolute Korean glaze while still tasting the irn bru flavour.

Instructions

Step 1

Marinade the wings in buttermilk, hot sauce and cayenne pepper for at least one hour

Step 2

Add all of the spices to the flour and mix well. Heat up the oil at this stage.

Step 3

Dip the marinaded wings into the flour, then into a bowl of water, then back into the flour before adding into the oil

Step 4

Fry the wings in batches until golden. Preheat the oven to 160 at this stage.

Once all of the wings are fried add them into the bowl with the wing glaze and shake well so all are covered. Place into the oven for no more than 10-14 minutes. Enjoy!
