Ingredients

3 cupsoats
1 cupground almonds
¾ cupcocoa powder
2 tspbaking powder
2 tspbicarbonate of soda
1 tspsalt
1 ½ cupsdates
soaked in hot water then drained
5bananas
medium, very ripe
2 Tbspeanut butter
2eggs
1 cupwater
1 Tbscoconut oil
2 Tbspcinnamon
1 Tbspmixed spice
150mlsour cream
1 cuppecan halves
chopped
50gdark chocolate
chopped
Instructions
Step 1
Blitz the dates in a blender until smooth(ish). Mix with all the other wet ingredients (including bananas) using a stand mixer
Step 2
Blitz two cups of the oats in a food processor until it resembles flour. Mix with all other dry ingredients (in seperate bowl to the wet) - including the chopped nuts and chocolate
Step 3
Combine the two, mix until well combined
Step 4
Spoon into muffin tin
Step 5
Bake for 25 mins at 170C
