Instructions
Step 1
Preheat oven to 200, line tray with baking paper, bake diced bacon. On a separate tray, lay out cauliflower leaves (split down the middle) to bake for ~5-10 minutes.
Step 2
Heat oil on a medium saucepan, and sauté the leek. Add chopped potato, cauliflower, and stock. Simmer until soft, stir nutritional yeast through, and blend until smooth.
Step 3
Serve with Greek yogurt or sour cream if desired, and or grated cheddar.
