Instructions

Step 1
Combine the dry ingredients in a large mixing bowl, then make a well in the centre. In a separate bowl or large jug, gently whisk the eggs into the milk, then pour this into your dry ingredients. Mix carefully with a spoon until just combined; small lumps are ok - you don’t want to overmix it.
Step 2
Heat a large, flat frying pan over a medium-high heat and add a tablespoon of vegetable oil. Use a piece of kitchen paper to rub the oil around the pan, then use a ladle to spoon some of your batter into the centre of the pan, into a pancake about 12cm in diameter.
Step 3
Allow the pancake to cook - don't be tempted to flip too soon! Wait for small holes and bubbles to appear on the surface and it looks a little dry on top, about 2-4 minutes. Use a spatula to flip the pancake over and allow the other side to cook for 2 minutes more -it should be golden brown on both sides.
Step 4
Put the cooked pancake on a heatproof serving plate in a low oven while you continue cooking the rest, stacking them onto the plate in the oven as you go. Swipe the oil soaked kitchen paper around your pan before each new pancake, using a little more oil it it seem too dry.
Step 5
Serve with dollops of yoghurt, some berries and a drizzle of honey. Garnish with fresh ml for a green flourish, and dust with icing sugar for the pertect finish.
