Cacio e Pepe Breaded and Fried Zucchini
This one is for all the Trader Joe’s die hard fans. My bag of Cacio e Pepe gluten free puffs were starting to go south so I made the executive decision to turn them into some breading for some zucchini. Best decision ever!! Go make these they don’t disappoint!

Instructions
Step 1
1.) Clean and slice 2-3 whole zucchini. (Cut About 1/4 of an inch thick).
Step 2
2.) Grind or break up your Cacio e Pepe puffs using a food processor or even just by hand in a ziploc bag. Place on a plate or in a bowl to add to your breading station.
Step 3
3.) In a separate bowl crack 4 eggs, add 1 tsp of hot sauce and mix.

4.) Combine 1 cup of plain panko with one cup of seasoned panko bread crumbs in a third bowl. If you want to stay gluten free here sub in your gluten free panko instead!
Step 5
5.) Now we start breading. First drop your zucchini in the cacio e pepe breading, then into the egg wash, and then into the panko.
Step 6
6.) In a frying pan on medium high heat add about 1/4 inch of canola oil or whatever oil you prefer to fry in.
Step 7
7.) Once hot drop in your zucchini and cook about 2-3 min on each side or until perfectly golden brown.
Step 8
8.) Garnish with some grated Parm and parsley and enjoy with some marinara!
