Roasted Garlic Gnocchi with Short Ribs

A quick and delicious Trader Joes dinner! We used the Korean marinated beef short ribs from the frozen aisle, and added it to a garlic butter gnocchi, topped with Parmesan!

Step 1
Remove the excess skin from a head of garlic. Wrap in aluminum foil, drizzle with olive oil, and bake at 400 for 30-40 minutes.
Step 2
Bring a pot of water to boil. Once boiling, add your gnocchi and remove once the gnocchi starts to float (2-3 minutes).
Step 3
Heat up your grill or grill pan. Once hot, grill your short ribs for 2-3 minutes on each side. Remove and let rest for a few minutes. Next cut the meat into pea sized pieces.
Step 4
Bring a separate large skillet to medium heat. Add 1 tbsp of olive oil and your gnocchi. Add your black pepper and sauté the gnocchi until it’s slightly crispy (5 minutes). Turn the heat down to low.
Step 5
Once the gnocchi is slightly crispy, add a few knobs of butter, your roasted garlic, the short rib meat. Mix together and turn off the heat.
Step 6
Garnish with a bit of lemon juice, chopped thyme, and grated parmesan.
