I started by heating up 2 pots 1.5L of water (with salt and oil).

When the water was boiled. I added the Pasta into 1 pot. Let it cook until done.

There are a few ways you can prepare the Zucchini/Courgette. Look at the picture for inspiration. I cut the top and bottom off the Courgette and sliced it in half long-ways. I used a skin peeler to cut slices out of Zucchini and then cut them individually into little stripes. (Like picture no.2)

After the Zucchini is prepared, I add it into the other pot of boiled water along with the salt and oil. Let that boil for only 2-3 minutes without a lid. Don't overcook it!

Drain the water from both pastas when they are done cooking using a colander.

Next I started making the sauce. Peel, cut and finely dice the onions. (or use a food processor/grater). Melt butter on a saucepan and add in the onions.

After a minute or 2 add in the red pepper after its cut and diced. Cook that for about 2-3 minutes and then add the mince. Cook for another 5-8 minutes until the mince is fully cooked .

Finally add in the jar of sauce and cook for another 5-6 minutes. Remember to stir from time to time. Serve sauce warm on top of Pasta. 🍝
