Instructions
Step 1
Heat olive oil in a soup pot, add pancetta, cook until golden, remove with a slotted spoon and set aside.
Step 2
Add onion, cook for 5mins over a ow heat until softened, add garlic & chilli flakes, mix through and cook for 1-2 mins.
Step 3
Pour in stock & tomatoes, season & bring to the boil and then simmer for 5 mins.
Step 4
Mix in spinach, season and cook for 1-2 mins.
Step 5
Add tortellini, cook for 3-5 mins until cooked through.
Step 6
Add pancetta back in, pour in cream, & parmesan. Heat through for 1-2 mins. Mix in fresh basil.
Step 7
Serve with extra parmesan & chilli flakes.
