Baby greens, herb-marinated roasted chicken, goat cheese, corn, seasonal fruit, watermelon radish, almond, sesame seed, citrus champagne vinaigrette In our fantasies, this is the salad you make after a stroll through the farmers’ market. It starts with a fluffy bed of fresh baby greens and our juicy cage-free herb-marinated chicken breast. In the summer, we roast whole ears of corn and cut it off the cob. In winter, we act like resourceful farmers and roast corn that was frozen at peak sweetness from the previous harvest. We also use different fruit depending on the season. Slivered almonds and toasted sesame seeds bring crunch while crumbled goat cheese adds a tangy richness. The Champagne vinaigrette is a classic French-style dressing, subtly flavored with shallots and Dijon mustard. We like it because it highlights the ingredients without overwhelming them—just what you want for an elegant salad like this one.
