Instructions

Step 1
Wrap tofu in a tea towel or paper towels and squeeze gently to remove water.
Step 2
Place in a colander over a bowl or in the sink and set aside.
Step 3
In a large bowl combine mayo, mustard, nutritional yeast, apple cider vinegar, garlic powder, turmeric, paprika, salt, and a pinch of cayenne pepper.
Step 4
Mix until combined and smooth.
Step 5
Use your hands and crumble the tofu into small pieces into the large mixing bowl with the mayo mixture.
Step 6
Add celery, onions, parsley, and dill or chives and mix to combine.
Step 7
Use right away or chill for a minimum of 30 minutes to allow spices and seasonings to marinate the tofu.
