Prepare the vegetables
Step 1
Cut the broccoli in to florets Peel and slice the carrot
Velveting the chicken
Step 2
Prepare the ingredients
Slice the chicken breast in half length ways then Slice into 1/8 inch bite size peace cutting across the grain
Step 3
Put all the marinade ingredients into a bowl with the chicken and mix together until there is no dry corn flour left
Cover the bowl or put into a zip lock bag then put into the fridge to marinade for at least 30 minutes
Step 4
In a wok bring some water to a light boil then add the chicken moving the chicken when needed to stop it from sticking together
Blanch the chicken for about 2 minutes
For the stir fry sauce
Step 5
Put all the sauce ingredients into a bowl and mix together
Step 6
In a wok bring some water ti the boil Then blanch the broccoli in it for about 30 seconds then put it into a ice bath
Step 7
Now blanch the carrot for about 15 seconds before putting them in a ice bath
Step 8
Wipe the wok clean then season don't add any excess oil
Step 9
Add the sauce to the wok on a high heat cook it off until it is nice and hot

Now add the vegetables stir fry for a minute then add the chicken continue to stir fry for another minute or 2

Add the corn flour and water mix to the wok mix in and continue stir frying until the sauce is thickened to you satisfaction

If the sauce has not thickened enough and the food looks cooked you can plat up the food and continue reducing the sauce some more before pouring on to the planted up food

Serve with rice
