Instructions

Step 1
Mix the flour and water, initially with a spoon till the water gets absorbed and then get in with your hands! Knead till the dough is tacky but not sticky. Took me about 15-20 mins. Wrap in clingfilm and rest for 30 mins. Then take it out and knead again. Shape into a ball, it should have a smooth surface. Then cover and rest for 30 mins again. Take dough out of bowl. Make a hole in the centre and stretch it out till you have a large ring. Cut this ring so you have 2 long ropes. Keep rolling each rope till you get a thickness of 3-4 cm diameter and cut out into small chunks. Aim for 8-10 grams per piece to get a thin skin. Roll these out into small circles on a lightly floured surface. Dust off any excess flour. Prepare the filling by heating up oil in a pan on medium heat, add the onions, mushrooms, carrots and fry for 3 mins till browned. Then add leeks and cabbage and season. Cook for another 5 mins till the have softened. Add water if needed. Finally the ginger, garlic, soy sauce, soy sauce, vinegar and sriracha go in. Stuff them and pleat them. Steam the dumplings. Serve hot with a drizzle of chilli oil.
