Manchego Crusted Fajita Quesadilla with Seasoned Sour Cream

Fajita Seasoning

Instructions
Step 1
* Add all seasoning ingredients to a small bowl and stir to combine.
Step 2
* Mix one tablespoon of fajita seasoning into the sour cream. Keep covered in the fridge until ready to use.
Step 3
* Add the diced chicken to a medium bowl with the remaining fajita seasoning. Toss until evenly coated and set aside.
Step 4
* Add 1 Tbsp olive oil to a 10-inch non-stick skillet. Cook the red peppers and onions until softened, about 5 minutes. Season with salt and pepper and set aside in a medium bowl.
Step 5
* Add 1 Tbsp oil to the same skillet then cook the chicken until browned and cooked-through, about 4-5 minutes. Add to bowl with peppers and onions and toss to combine.
Step 6
* Wipe the skillet clean with paper towels.
Step 7
* Place over medium heat and add 1/4 cup manchego the left side of the skillet. Place a tortilla on top then add 1/4 cup of the Mexican cheese blend to the left side of the tortilla. Spoon 1/4 of the chicken/veg mixture on top, followed by another 1/4 cup of Mexican blend. Fold the right half over to cover. Cook until manchego becomes browned and crispy and the cheese inside starts to melt, about 7-8 minutes. Use a spatula to loosen from the skillet and flip to cook on the other side, about 2 minutes.
Step 8
* Repeat with remaining ingredients. Slice into wedges and serve with seasoned sour cream.
