Puffy apple gingerbread treat

A delicious sweet treat, finished in no time, tasting like autumn days with golden sun and a book in your blanket. If you leave out the caramel candy or use one without animal products, this can be very easy vegan - many convenience puff pastrys are vegan, just look at the back :)

Instructions

Step 1
Preheat your oven according to the instructions on the puff pastry.

1. Cut the apple in slices and cut out the inner part. You can use the big end of a piping tip for that or any other Semi-Sharp round object in a fitting size.

2. Get your sugar (I prefer brown, but white works as well) and mix it with your gingerbread spice. If you don't have any you can use cinnamon or mix it yourself, it just contains cinnamon, ginger, cardamom, muscat and cloves. Use mainly cinnamon tho and be very careful with the cloves as they can overpower everything.

3. Lay out your puff pastry sheet and cut it in about eight equal rectangles, depending on the size of the apple you used. Take the apple slices, cover them in the sugar-spice mix from both sides (it should stick quite good since the surface is wet) and lay it on your pastry pieces.

5. Make some cuts inside of the pastry rectangle, leaving a middle part untouched, so you end up with a cut from a corner to the middle like an L (look at the picture for reference). Add one caramel candy in the middle of an apple slice, I used Werther's original.

6. Fold the outer thin corners to the middle of the apple (or the candy). Prepare a baking sheet and bake according to the directions on the puff pastry, for me it was 18 minutes at 390 F (200°C).

7. Let then cool a little before enjoying them with a nice hot chocolate.
