Ingredients

100gbrown basmati rice
rinsed
160gdried green speckled lentils
rinsed
160gfrozen peas
160gspinach
600mlwater
boiling
1 Tbspgaram masala
1 tspground turmeric
½ tspdried chilli flakes
120gsardines
tin, in oil or water, drained
sea salt
freshly ground black pepper

Step 1
1Preheat the oven to 210°C/190°C fan/gas 7.
Step 2
2Put the rice, lentils, peas and spinach in a medium, shallow casserole dish. Pour over the boiling water, season with salt and pepper and stir in the spices. Top with the sardines, cover with a tight-fitting lid or foil and cook in the oven for 40 minutes. 3Remove from the oven and leave to stand, covered, for 5 minutes, then garnish with the chilli and coriander and serve with lime wedges to squeeze over.

Try this with harissa paste instead of garam masala for an easy Middle Eastern twist.
