Chicken Flautas

Instructions

Step 1
In a pot, heat 2 tbsp oil on medium heat, then add chicken breast to brown on both sides
Step 2
Pour in entire jar of salsa verde, stir chicken, then cover with lid to let cook on medium-low heat for 12-15 minutes.
Step 3
Once chicken is tender, remove from heat and transfer only the chicken to a plate. Shred with 2 forks
Step 4
Pour shredded chicken back into the pot, stir in cilantro, lime juice, and seasonings. Set aside.
Step 5
For Flautas:

Heat 3 tbsp oil in a large saute pan on medium-low heat.
Step 7
Heat tortillas over an open flame until slightly charred.
Step 8
On a flat surface or cutting board, fold in shredded chicken + 1 spoonful refried beans, and roll up.

Transfer to the saute pan with oil, fold side down, to fry/brown. Flip every couple minutes or when browned/crisped and continue with the 2 other tortillas.
Step 9
Add avocado + more fresh cilantro, sour cream, salsa, and enjoy!
