Instructions

Step 1
dice onion, bell pepper, chicken (trim fat), sausage and tasso.
Step 2
add butter and garlic to pot at medium heat. once melted, add chicken and sausage then cook until browned
Step 3
remove meat. add onion, bell pepper, and green onions (cut with scissors). saute until soft
Step 4
add 4 or 5 Tbsp of roux and chicken broth and stir until roux is melted (about 15 mins)
Step 5
add all meat into pot, and add the rest of chicken broth. fill pot with water until meat is "floating"
Step 6
bring to a rolling boil (add more roux if not thick enough), and leave for an 1 1/2 ro 2 hours. stirring occasionally.
