Shrimp Tacos

4 ouncesshrimp
peeled and deveined

¼ teaspooncreole seasoning

½ tablespoonsalted butter

1clove garlic
minced
Avocado Sauce

0.5avocado
medium, halved and pitted

¼ cupplain yogurt

½ tablespoonlime juice

1 cupspinach

1 tablespoonolive oil

¼ teaspooncreole seasoning

⅛ teaspoonground cumin

⅛ teaspoonkosher salt

Instructions
Cook the shrimp
Step 1
Place the shrimp in a medium-sized bowl. Add the creole seasoning and toss to coat.
Step 2
Melt the butter in a small skillet over medium-high heat. Add the garlic and sauté, stirring frequently for 30 seconds.
Step 3
Add the shrimp to the pan and cook for 1-2 minutes. With a fork, flip the shrimp over and cook the other side for an additional 1-2 minutes, or until the shrimp is pink and opaque. Transfer to a bowl.
Make the avocado sauce
Step 4
Scoop the avocado flesh into a small food processor or blender. Add the yogurt, lime juice, spinach, olive oil, creole seasoning, cumin, and salt. Puree until smooth.
Assemble
Step 5
Divide the shrimp and garlic between the two tortillas. Spoon the avocado sauce over the shrimp. Top with fresh chopped cilantro, if desired and enjoy!
