Instructions

Preheat oven to 400F

Step 1
MARINADE: In sm. bowl, mix together honey, mustard, garlic, lemon zest, & juice. Pour over chicken & season.
Step 2
Put chicken, skin-side up, on lg. baking tray; dot new potatoes in between them. Drizzle oil over potatoes & sprinkle with sea salt.
Step 3
Roast (35 min.) until chicken skin caramelises & is charred in places.
Step 4
Add spinach & peas to tray; return to oven (2-3 min.) until spinach has begun to wilt peas are hot.
Step 5
Cover vegetables in pan sauce before serving.
