A nice chunky vegetable soup that uses the nutrient-rich sweetness of cooked cabbage instead of pasta. Adding some polish sausage gives some protein and goes naturally well with cabbage.

Instructions
Step 1
Slice up carrots; cut up celery, onion & pepper. Slice half the head of cabbage into thin strips.
Step 2
Saute carrots in olive oil in a soup pot until softer/browner (5 minutes). Add the celery, onion and sweet peppers to the pot, saute until the onions start getting translucent.
Step 3
Add the sliced cabbage to pot, add a bit more olive oil (optional) & stir until it gets soft.
Step 4
Add broth, bring to boil
Step 5
Add cut up sausage & canned tomatoes, return to boiling
Step 6
Throw in some pasta, cook until it's al dente.
