1low-carb whole wheat tortilla

2 tablespoonstomato paste
or thick tomato salsa

50gcooked ham
chopped, or crumbled bacon

6cherry tomatoes
halved

125greduced-fat mozzarella
thinly sliced

6olives
or anchovy fillets

2 tablespoonsfresh herbs
chopped

salt

ground black pepper

1 teaspoongrated parmesan cheese

3 sprigsbasil
or arugula to serve, optional
Instructions
Step 1
Preheat the oven to 190°C
Step 2
Lightly grease a banking sheet or line with parchment paper. Place the tortilla on top
Step 3
Spread the tomato paste or salsa evenly over the tortilla and top with the ham or bacon. Add the tomatoes, mozzarella, olives or anchovy fillets, and herbs, if using. Season with onion salt, garlic, powder, smoked paprika, and pepper and sprinkle on the parmesan
Step 4
Bake for 10 minutes. Top with basil sprigs or scatter with arugula to serve. Cut into wedges to serve with salad, if desired.
