Ingredients

2 tspground cumin
1 ½ tspdried oregano
½ tspdried basil
1 Tbsolive oil
1onion
chopped
1green bell pepper
1 cupcarrots
grated
4cloves garlic
minced
2 tsppaprika
¼ tspground red pepper
1can diced tomatoes
1jalapeno pepper
minced
2 CanBlack Beans
rinsed and drained
4Beef Bullion Cubes
2 Tbscorn starch
2 ½ cupswater
¼ cupSharp Cheddar
1 cupcorn
Instructions
Step 1

Heat the oil in large skillet, add the onion, garlic, corn, green peppers, and carrots. Cook down
Step 3
Add all spices to mixture, mix together
Step 4
Mix the beef bullion, into warm water, once it is desolved. Mix in the corn starch, and pour mixture into skillet.
Step 5
Simmer to let flavors blend
Step 6
Serve in bowl with sprinkle of cheese on top. Goes well with cornbread and also a spoonful of sour cream
