Instructions

Step 1
Grind oregano, thyme, mayoram in mortar first; then add garlic and salt together (salt helps garlic to grind), then add red pepper flakes.

Transfer the grinder mixture into a small bowl. Add soy sauce and olive oil. Mix well.
Step 3
Cut chicken through the middle (or you can just cut out the middle like and make it a butterfly chicken), then wash it, then dry it very well (water spoils chicken in marinade). Cut off the fat.

Step 4
Transfer to a heat resistant bowl in which will be transferred into the oven. Put the parchment paper at the bottom of the heat-resistant deep tray, then put the chicken on top of the parchment paper, and pour the marinade over it. Cover with serene wrap.
Step 5
Keep on the counter for an hour and a half hours. Then transfer to the fridge until you are ready to cook it (better keep overnight).
Step 6
Pre-heat the oven to 400. Put in the chicken for ~40 minutes.
