Instructions
Step 1
Par boil rice for 20 minutes or put into boiled water for the same duration and allow the rice to soak up the water
Step 2
In a pan, put in oil, saute chopped onions, add tomatoes and peppers. Stir then fry for 30 minutes until the oil comes to the top.
Step 3
Add spices, salt and meat stock or water. Once boiling add rice, and keep stirring for 20 minutes.
Step 4
Add a little butter and allow to cook until done.
Step 5
Serve with fried plantain, fried chicken and coleslaw.
