Sambal from Brunei

Sambal is a spicy sauce that is both loved and well known in Brunei. There are several variations and it is included in a lot of dishes, often featuring in the recipe title. It is jam packed with flavour!

Instructions
Step 1
Add the onions, garlic, ginger into a food processor or the jug of a hand blender, and blend with a little water until a thick paste forms. Transfer to a bowl and set aside
Step 2
Now blend the softened chillies, fresh chillies (seeds removed if you wish, depending on how hot you want the sauce), ginger and shrimp paste. Blend using a little water and until smooth. Set aside
Step 3
Heat the oil in a non-stick wok or frying pan and sauté over a medium heat for 10 minutes, until darker in colour
Step 4
Add in the blended chilli mix and stir
Step 5
Add in the tamarind, salt and sugar and stir to combine. Turn down the heat to low and cover with a lid. Cook for an hour, stirring every 10-15 minutes to prevent sticking and burning. Add a little water if it starts to stick
