Instructions

Step 1
Dice the onion, cook on low heat, covered, with a little bit of olive oil to caramelise it for 40 minutes, stirring every 10 minutes.
Step 2
Finely chop the garlic and parsley stems. Add them to a pot with the dried rosemary and a little bit of olive oil and cook on low heat for a couple of minutes just enough to get it fragrant.
Step 3
Zest and juice the lemon. Save a little bit of the lemon zest to garnish the dip.
Step 4
To a food processor add the cooked chickpeas and white beans, the parsley leaves, sweet paprika, salt and pepper, tahini, caramelised onions, lemon juice and zest, olive oil, and the cold water and process until smooth.
Step 5
To garnish, use olive oil, a sprinkle of paprika and the reserved lemon zest.
