Pork Roast w mashed potatoes and veggies

Cheap and easy and definitely a crown pleaser for kids.

Instructions

Step 1
Cook the pork roast according to package, usually 30 minutes in a 350 degree oven. I add a cup of water to it, so I have juice to top the mashed potatoes with and to prevent it from drying out. I also added a bag of carrots I had on hand, you can add any veggie you want. I randomly added mushrooms halfway through cooking.
Step 2
Prepare the mashed potatoes according to package. I use Idahoan brand they come in many flavors, are only 1$ and take two minutes to prepare (just add hot water.) For this meal I chose Monterey pepper jack
Step 3
For the green beans, I cooked in a glass bowl in the microwave for 4 minutes with a little butter, salt, pepper, and minced garlic.
