Step 1
Preheat oven to 475F.
Step 2
Roughly chop cabbage leaves.
Slice half the onion.
Dice the other half.
mince garlic.
finely chop pepper
cook rice

break apart tomatoes with hands.
zest 2 tsp of the lime.
quarter lime
Step 4
put cabbage and sliced onion on sheet pan - drizzle with oil, salt, pepper. roast 11-13 mins until cabbage wilts. put in large bowl
Step 5
in large pan, sautee diced onions, garlic, s/p 1-2 mins until slightly softened. add tomatoes, s/p. cook 4-6 min until thickened
Step 6
to cabbage, add rice, yogurt, lime zest, 1/2 cheese, juice of 1 lime wedge, adobo peppers. stir, edit to preferred consistency
Step 7
spread 1/3 of this filling on the bottom of a 9x13. put remaining filling in tortillas - roll, place in 1 layer in pan. top with tomato sauce and cheese
Step 8
bake 10-12 mins until cheese has melted
