Instructions

Step 1
If using dried pinto beans, follow instructions on how to cook from the packet. Basically leave them to soak overnight. Then cook the beans for around 45 mins to 1 hour in simmering water - I add a stock cube and 1tbsp of smoked paprika here to infuse a bit of flavour.
Step 2
Cut up and fry the bacon until crispy. Finely shop the onion (like super finely so it will melt) and add in with the bacon.
Step 3
Make the garlic into a paste and add for 30 seconds before adding 250ml of water, your drained pinto beans, a stock cube, smoked paprika and ground cumin, and oregano. Leave to simmer for 10 minutes until the sauce has reduced.
Step 4
Add lime to the beans and serve up with some pico de gallo, sliced avocado, and sweet corn.
