Step 1
Preheat oven to 200°c

Step 2
In a bowl, add broccoli, sprouts halved, cubed sweet potato and chickpeas. Toss with olive oil. Add garlic powder, salt & pepper. Put on large baking sheet. Roast for 15 mins.
Step 3
Toss vegetables, roast for another 15 minutes.
Step 4
Turn oven to grill, grill for 2 minutes or until sprouts are slightly charred.
Step 5
Transfer vegetables to large bowl.
Step 6
In a medium bowl, whisk the dijon mustard, tahini, water, apple cider vinegar, maple syrup and lemon juice. Add preferred amount of salt & pepper.
Step 7
Add desired amount of dressing to veggies.
Step 8
Can be refrigerated for 5 days in an air tight container.
