Instructions
Step 1
1. Start by removing the sausages from their casing and frying off in a tablespoon of oil until golden. Set aside.
Step 2
2. In the same pan, fry off your shallot for 5 minutes before adding your garlic. Stir and season well.

3. Add in your remaining ingredients apart from the spinach and leave to simmer on low heat for around 10 minutes, stirring occasionally.

4. Add the spinach, mix until wilted. Taste for seasoning.

5. Serve up with your crumbled chorizo sausages on top and a drizzle of chilli oil. Mop it up with freshlv toasted bread and eniov!
