3 poundstomatoes
fresh ripe, any type, sweet
4cloves garlic
peeled
0.5onion
chopped
0.5red bell pepper
chopped
2 tablespoonsolive oil
salt
to taste

½ teaspoondried oregano
2 cupschicken broth
2 tablespoonsfresh basil

Step 1
Preheat oven to 450F
Step 2
1. Cut tomatoes into medium pieces, roughly chop onion and bell pepper. Combine those, and garlic with olive oil, salt, pepper, dried basil, and oregano on a baking sheet and cook for 25 minutes at 450F.
Step 3
When the items are done roasting boil chicken broth
Step 4
Add the roasted ingredients and the fresh herbs to the boiling chicken broth and blend with a emersion blender. Add heavy cream.
