Instructions

Step 1
Prep large skillet with 1 tbls olive oil over medium heat.
Step 2
Core and shred cabbage. Seed and slice mini sweet peppers. Slice onion.
Step 3
Add all ingredients to large bowl and drizzle remaining olive oil over all add salt/pepper and stir.
Step 4
Once skillet is up to temperature add all ingredients into skillet. Cook covered stirring occasionally. Cook till cabbage is tender about 10-15 minutes.
Step 5
Taste to see if you need more salt or pepper. If so add, stir and taste again.
Step 6
Place in serving dish and serve immediately.
