Instructions

Step 1
Preheat your oven to 200°C/fan 180°C/gas 6 and line a large baking tray with non stick paper
Step 2
Put the mushrooms, garlic, onion and thyme sprigs in the baking tray,spray with low-calorie cooking spray and toss well. Spread out in a single layer and roast for 30-40 minutes or until tender.
Step 3
Discard the thyme sprigs and transfer one-third of the mushroom mixture to a large saucepan. Add the stock, mustard and vinegar to the pan and whizz until smooth with a stick blender (or use a food processor and return to the pan).
Step 4
Add the rest of the roasted mushroom mixture to the mushroom purée and heat through gently over a low heat, stirring occasionally. Remove from the heat, stir through the fromage frais and season to taste.
Step 5
This is especially good stirred through tagliatelle or smaller pasta shapes such as trofie or spirali. Scatter over the extra thyme leaves and sprigs to serve.
