Instructions
Step 1
Boil a pan of water and add the rice. Cook for 15 minutes until soft. Drain.


Step 2
Meanwhile, mix the cherry tomatoes, red onion and balsamic vinegar in a bowl, season and set aside.



Step 3
Skin and de-stone the avocado, and mash in a bowl with a fork. Add the lemon juice and chilli flakes and mix. Set aside.



Step 4
Heat a large frying pan and add a few sprays of fry light. Add the mince, cumin, chilli powder, paprika, Worcestershire sauce and the tomato and cook, stirring occasionally for around 10 minutes until cooked through.








Step 5
Place the rice in a large bowl, and top with the mince, salsa, guacamole, lettuce, spring onion and mozzarella.
