Autumnal focaccia with pumpkin, mushrooms and aubergines
High hydration (75%) stuffed focaccia, filled with pumpkin, mushrooms and aubergines. The vegetables are thinly sliced and sauted in a pan. The receipt can be made more spicy by adding garlic and more autumnal switching aubergines for kale (cavolo nero).
Ingredients are intended for a small 22x22 cm tray.

For the focaccia
Step 1
Start by adding the fours to the mixer and start it at low speed to mix them
Step 2
Add 80% of the water and mix at low speed
Step 3
Add the salt to the remaining water. When the dough has absorbed all the water increase the speed and add the salted water in small amounts, waiting for the dough to absorb the previous quantity before adding more. Pay attention to lower a bit the speed when adding water not to splash it around

When all water has been absorbed add the oil little by little. The entire procedure should take ~10 minutes
Step 5
Let the dough rest and either turn on 3 times the mixer every 15 minutes for 10 turns or so or remove the dough from the mixer and fold it manually. If you fold it manually remember to oil your hands as it will be sticky

Let the dough rise covered so that it won't dry in a warm place until it rises 2x - 2.5x
For the filling

Cut the pumpkin, the mushrooms and the aubergines very thin
Step 8
Saute them in a pan with oil. Add salt to taste. Optionally add garlic if you like the taste
Assemble and cook

When the dough is ready, cover the worktop with semolina flour and pour the dough on top of it

Flip the dough on the other side to cover both sides with the flour

Cut the dough in half and spread it over the tray evenly
Step 12
Add the filling on the whole surface or leave a border around to seal it if you prefer

Cover the focaccia with the remaining dough

Cook it at the highest temperature your oven reaches on the lowest level. Halfway through cooking move the tray to the middle level
