Instructions

Step 1
Preheat oven to 190C

Heat the oil in a large frying pan

Add sliced onions and cook
Step 4
Add courgettes & rice to pan and mix
Step 5
Add the hot stock
Step 6
Turn up the heat and cook for 5 minutes stirring occasionally; mixture needs to stay quite loose and oozy. Add a little more stock if needed

Take the pan off the heat and gently stir in the creme fraiche

Add 100g of cheese and a good pinch of salt and pepper

Taste and adjust seasoning if required

Lightly oil a 25x32cm dish

Tip everything into prepared tray, ensreing the rice is evenly distributed

Roughly flatten it out and try to get most of the courgette on top, as it helps keep in the moisture

Sprinkle over the rest of the grated cheese
Step 14
Bake in hot oven for 40 minutes, or until the top is golden and the rice is cooked.
