Instructions
Step 1
In bowl, whisk together sesame oil, ginger, lime zest & salt. Add peas & scallions; toss to combine.
Step 2
Cut each chicken horizontally in half to make 2 thin cutlets; pound to an even thickness.
Step 3
Heat olive oil in skillet on med.-high. Season chicken with salt & pepper; cook until golden brown (2 min. per side.)
Step 4
Reduce heat to low & add coconut milk. Simmer (1-2 min.) until chicken is just cooked through & sauce has thickened.
Step 5
Transfer chicken to plates.
Step 6
Add remaining lime juice to skillet, scraping up browned bits.
Step 7
Spoon sauce over chicken & sprinkle with lime zest. Fold clantro into pea mixture; serve on top of chicken. Drizzle with sesame oil, if desired.
