400gcauliflower florets
2 tbspssunflower oil
1 Tbspcornstarch
or cornflour
1 Tbspsoy sauce
4dried red chillies
seeded and stemmed
fresh greens
pak choy, scallions
toasted sesame seeds

Step 1
Preheat oven to 220°C.

Step 2
Place cauliflower florets in large mixing bowl. Whisk the sunflower oil, cornflour and soy sauce together in a small bowl, pour over cauliflower and toss well to coat.
Step 3
Transfer cauliflower to parchment lined baking sheet and roast in the oven for 25-30mins, turning once halfway, until tender and golden.
Step 4
Prepare the sauce while the cauliflower cooks. Whisk together all the ingredients for the sauce.
Step 5
Heat a large skillet or wok over low heat. Add chilli peppers and toast for 1-2 mins until fragrant.
Step 6
Pour in sauce and bring to a boil over a medium heat.
Step 7
Add baked cauliflower and toss well until coated.
Step 8
Serve, garnished with greens and toasted sesame seeds.
