A hot & spicy Caribbean rice and beans, great as a small dish or side. Serve with juicy mango and Caribbean spiced or jerk chicken.

Ingredients
6 servings
1 Tbspvegetable oil
2garlic clove
minced
0.5white onion
diced
2 tspcreole spice
260grice
1 sprigfresh thyme
tsp
1can coconut milk
1can kidney beans
rinsed & drained
2bay leaves
small
salt
to taste
pepper
to taste
530mlveg stock
1scotch bonnet
1 tsppaprika
For creole spice mix
Instructions
Step 1
1. Wash rice until water runs clear
Step 2
2. Heat oil in saucepan, add onion, garlic, thyme & hot pepper. Sauté 60 secs.
Step 3
3. Stir rice into pan, followed by coconut milk, bay leaf, creole spice & stock.
Step 4
4. Bring to a boil and cover, simmer until rice is cooked (around 20mins) stir occasionally to prevent rice sticking or burning to sides of pan.
