Step 1
Chop onion, carrots and celery
Step 2
Chop neck into 1 1/2 inch pieces
Step 3
Heat a stainless steel pan over high heat and add oil and bones; let bones brown and caramelize – may have to do in two batches.
Step 4
Add vegetables and let caramelize with meat for a few minutes
Step 5
Add wine and scrape loose meat from bottom of pan and transfer to roasting pan and add stock
